Wondering what I’ve been eating? Wonder no more! Last week, I bought some HUGE and delicious pork chops and Brussels sprouts, and wanted to do something different than cook them separately in bacon fact! After some searching online, I combined a few recipes and here’s what I came up with: One-Pan Porkchop & Brussels Sprouts!
To make One-Pan Porkchop & Brussels Sprouts, you need:
2lbs pork chops (this was 4 thick chops for me)
2lbs Brussels Sprouts (halved)
2 apples (diced)
2 TBSP Avocado Oil (I use Primal Kitchen’s)*
2 tsp salt
1 tsp pepper
1c organic free range chicken broth*
2 tsp Dijon Mustard
1 onion
1/4 tsp nutmeg
1/4 tsp cumin
4 cloves garlic (crushed – I love using this gadget!)*
First, heat skillet and 1 TBSP avocado oil. Once the skillet is heated, add the pork chops (which should be salted & peppered on both sides). Cook for 5-6 minutes on each side, and then set aside on a plate.
Mix 1 cup organic free range chicken broth with the remaining salt and pepper, 2tsp Dijon Mustard, 1 TBSP avocado oil, the chopped onion, crushed garlic cloves, the Brussels Sprouts, and the apples in another dish. Cook in the same pan you started the pork in for five more minutes.
After this, re-add the pork and cook for 5-8 more minutes until done!
Serve by putting one pork chop and sprouts/apple mix as desired.
Great combination of sweet & savory, and healthy too!
